Rock Fish Fillet with White Wine Dill Sauce:
Ingredients:
- 2 rock fish fillets (7-9oz each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 shallot, finely chopped
- 1/2 cup dry white wine
- 1 cup fish or vegetable broth
- 1/2 cup heavy cream
- 1 tablespoon fresh dill, chopped
- Lemon wedges for serving
Instructions:
1. Season the rock fish fillets with salt and pepper on both sides.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Add the rock fish fillets to the skillet and cook for about 4-5 minutes on each side until they are golden brown and cooked through. Remove the fillets from the skillet and set them aside.
4. In the same skillet, add the chopped shallot and sauté for about 2 minutes until it becomes translucent.
5. Pour in the white wine and let it simmer for a minute to reduce slightly.
6. Add the fish or vegetable broth to the skillet and bring it to a simmer. Let it cook for about 5 minutes until the liquid reduces by half.
7. Stir in the heavy cream and fresh dill. Cook for an additional 2-3 minutes until the sauce thickens slightly.
8. Return the rock fish fillets to the skillet and spoon the sauce over them. Cook for another minute to heat the fish through.
9. Remove from heat and serve the rock fish fillets with the white wine dill sauce. Garnish with fresh dill and lemon wedges.
