Here's a recipe for paella rice with clams, mussels, prawns, and cod loins:

 

Ingredients:

- 2 tablespoons olive oil

- 1 onion, finely chopped

- 4 cloves garlic, minced

- 1 red bell pepper, diced

- 1 yellow bell pepper, diced

- 1 teaspoon smoked paprika

- 1 teaspoon saffron threads

- 2 cups paella rice

- 4 cups chicken or vegetable broth

- 1 cup white wine

- 1 pound clams, cleaned

- 1 pound mussels, cleaned and debearded

- 1 pound prawns, peeled and deveined

- 1 pound cod loins, cut into chunks

- Salt and pepper to taste

- Fresh parsley for garnish

- Lemon wedges for serving

 

Instructions:

1. Heat the olive oil in a large paella pan or wide skillet over medium heat.

2. Add the chopped onion, minced garlic, and diced bell peppers. Sauté until the vegetables are softened, about 5 minutes.

3. Stir in the smoked paprika and saffron threads, cook for another minute until fragrant.

4. Add the paella rice to the pan, stirring to coat it with the oil and spices. Toast the rice for a couple of minutes until it becomes slightly translucent.

5. Pour in the white wine and simmer until it evaporates, stirring occasionally.

6. Gradually add the broth to the pan, about 1 cup at a time, stirring occasionally. Allow each addition to be absorbed before adding more liquid. This process will take about 20-25 minutes until the rice is cooked and has absorbed most of the liquid.

7. Meanwhile, season the clams, mussels, prawns, and cod loins with salt and pepper.

8. Arrange the seafood on top of the rice, tucking them into the rice mixture.

9. Cover the pan with a lid or aluminum foil and cook for another 5-10 minutes, or until the clams and mussels have opened and the prawns and cod are cooked through.

10. Remove from heat and let it rest, covered, for a few minutes.

11. Garnish with fresh parsley and serve with lemon wedges on the side.
