Citrus-Herb Crusted Halibut
Ingredients:
- 7 oz halibut fillet
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper, to taste
- Optional: lemon wedges (for serving)
Instructions:
1. **Preheat the Oven:**
Preheat your oven to 400°F (200°C).
2. **Prepare the Marinade:**
In a small bowl, combine the olive oil, lemon juice, orange juice, lemon zest, orange zest, parsley, dill, salt, and pepper. Mix well to create a marinade.
3. **Marinate the Halibut:**
Place the halibut fillet in a shallow dish and pour the marinade over it, making sure it’s well coated. Allow it to marinate for about 15-20 minutes.
4. **Prepare for Baking:**
Line a baking sheet with parchment paper. Remove the halibut from the marinade and place it on the prepared baking sheet. You can drizzle any remaining marinade over the top.
5. **Bake:**
Bake the halibut in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and is opaque.
6. **Serve:**
Once cooked, remove from the oven and let it sit for a minute. Serve with lemon wedges on the side for extra flavor.
