Cheesy Clam Chowder Recipe

Ingredients:

1 lb Hook to Table clam meat in juice (use all the juice)
4 slices bacon, chopped
2 tbsp butter
1 medium onion, finely diced
2 celery stalks, finely diced
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups chicken broth
2 cups whole milk
1 cup heavy cream
2 cups potatoes, peeled and diced
1 bay leaf
1/2 tsp dried thyme
1/2 tsp Worcestershire sauce
1/2 tsp hot sauce (optional)
1 1/2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Chopped parsley or chives for garnish
Instructions:

In a large pot, cook bacon over medium heat until crisp. Remove bacon and set aside, leaving drippings in the pot.
Add butter, onion, and celery. Sauté until vegetables are soft, about 5 minutes. Stir in garlic and cook 1 minute more.
Sprinkle in flour and stir constantly for 2 minutes to form a roux.
Gradually whisk in the chicken broth, reserved clam juice from the pack, milk, and cream. Stir until smooth.
Add potatoes, bay leaf, thyme, Worcestershire sauce, and hot sauce. Bring to a gentle boil, then reduce to a simmer. Cook until potatoes are fork-tender, about 15–20 minutes.
Stir in the clam meat and simmer for 3–4 minutes—do not overcook, as clams can become tough.
Reduce heat to low. Add cheddar and Parmesan cheese, stirring until melted and chowder is creamy.
Remove bay leaf. Season with salt and pepper to taste.
Serve hot, garnished with crispy bacon and fresh herbs. Enjoy with crusty bread or oyster crackers.
